The food is not cooked through yet, even though the core temperature has been reached according to the probe of the oven/Dialog Oven.
Use the core temperature that is best suited for the food and the operating mode according to the cooking chart. You can find the cooking chart in the “Notes on use” booklet or in the operating instructions.
Insert the probe into the center of the thickest part of the food, making sure that the metal part disappears completely in the meat. Make sure the tip of the food probe is not sitting directly in fat or on bone or too close to the edge.
