Unsatisfactory cooking results with sous-vide cooking

The cooking results are unsatisfactory with sous-vide cooking in the steam oven/combi-steam oven.

The glass tray has not been used for sous-vide cooking.

If the glass tray is not used for sous-vide cooking, then cooking results will be unsatisfactory.

During the cooking process the floor heater is also activated. This heater creates additional heat in the oven compartment which, if the drip tray is not used, is applied directly to the food being cooked. This leads to the food being overdone.

During sous-vide cooking, the glass tray must always be placed in the first shelf level from the bottom.
